Improvised salads
 
Meze, Tapas and Antipasti
        All the products in Les Moulins Mahjoub savoury range can be used in cold and warm salads.

      Sun-dried tomato and black olive spreads will enhance the flavour of French dressing made with extra virgin olive oil, as will Tebourba Harissa.
       
Conjure up a cold caponata, with thin slices of aubergine (eggplant), tomatoes and fried or steamed courgette (zucchini).
        The entire Mediterranean is crazy about these snacks, which can be described as midway between aperitif-style nibbles and a starter/appetizer. Olives, sun-dried tomatoes, artichokes, aubergines (eggplant) and even capers with sea salt are excellent and convenient snacks.
        Fill the aubergine (eggplant) slices with a preparation made from sun-dried tomatoes or tomato paste, slivers of chives, parsley and fresh garlic. Thin with a few drops of extra virgin olive oil if necessary. And spice to taste with Harissa.
       For the artichokes, prepare a feta or ricotta cheese stuffing and decorate with chives.
Add a few slices of toasted or untoasted bread spread with olive or sun-dried tomato paste. A touch of spice can be added to these pastes with Tebourba Harissa.

Cooked dishes
       Olives, sun-dried tomatoes, mountain capers with sea salt and black olive and sun-dried tomato pastes are all excellent condiments enhancing the flavour of your dishes.
        The particular taste of Tebourba Harissa adds a touch of spice to tomato sauces, to dishes cooked in a sauce and to stocks for all types of couscous.
Capers go well with many traditional recipes, such as chicken tajine with lemon.
Tricks and tips
     Don't throw away the oil which comes with the sun-dried tomatoes, olives with Harissa or herbs, artichokes and aubergines (eggplant). It is a naturally flavoured extra virgin oil and as such ideal to enhance the flavour of your hot dishes.
     You are often advised to soak capers in water to remove the salt before using them fresh. But if the capers are to be used in a dish cooked in a sauce, a smaller amount than normal of salt can be added as seasoning, since the salt with which the capers are coated is a more than sufficient substitute in quality and flavour.
     Even though Les Moulins Mahjoub products are stable in olive oil or in salt, it is always preferable to store the opened containers at cellar temperature or in the refrigerator.
